1. Most flour products, including white bread, have a high glycemic index (an indicator that determines how much the blood sugar level increases when consuming a particular product). The higher it is, the faster product is converted into glucose and the more of this product is stored in fat.

When measuring the GI of foods, glucose itself is taken as the standard, which by definition has a GI of 100 units. Most foods have a GI below 100. Pure refined sugar, for example, has a GI of 70. So, can you imagine that the GI of white wheat bread is... from 80 to 95 units! 100 g white bread causes an insulin shock and is stored in fat in percentage terms even stronger than 50 g of pure refined sugar.

2. Most flour products contain harmful saturated fats(as butter), and store-bought flour products contain, even worse, dangerous transgenic fats in the form of margarines.

3. Flour products, including any store-bought bread, contain a huge amount of salt - about 10-14 g of salt per 1 kg of finished product. In other words, when consuming 300 g of bread per day, we only consume 3-5 g of salt with it, with our favorite bread!!!

4. There are assumptions and unconfirmed studies that modern “quick” yeast used in industrial baking contributes to a number of diseases, including cancer, due to its special resistance to external factors and the ability to reproduce quickly.

So what to do? Don't eat bread at all?

Bread and starchy foods can and should be eaten. The question is what kind of bread and how much.

According to the data World Organization healthcare, complex carbohydrates should make up from 50 to 70% of the daily energy intake. These must include at least 400 g of vegetables and fruits and at least 30 g of legumes, nuts or seeds.

Otherwise, it may well be boiled cereals, cereals, bread made from flour coarse, boiled potatoes (preferably not fried or baked, since the GI of boiled potatoes is 70, and baked potatoes are 90), durum pasta, legume products, soybeans, again vegetables and fruits. Moreover, since any purchased finished product or semi-finished product contains a lot of salt, I recommend preparing salt-free and yeast-free bread at home. It's very simple. Without complicated bread makers and long preparations you can bake delicious, light, low-calorie and super-healthy bread cakes with a low glycemic index. This means that we can eat bread and lose weight!

We will need: wholemeal flour, an oven with a grill or a new non-stick frying pan, preferably ceramic, parchment paper for baking.

You can buy coarse flour in online stores or prepare it yourself in 5 minutes.

We take any cereal: oatmeal, barley, pearl barley, buckwheat, brown and wild rice, etc. - and grind it in a blender for a few minutes. We get excellent coarse flour with a large fraction of crushed cereal (just what you need!). You can immediately grind mixtures of cereals. Or you can grind the cereals once for future use and then mix them as desired while preparing the dough.

1. Prepare the “liquid dough”: mix 2 cups (400 g) of coarse flour, 0.5 cups (100 g) of finely ground wheat flour, 50 g (2 tablespoons) bran and 2.5 cups (600 ml) warm water in a bowl and leave for 10 minutes. Before use, add water or flour to the dough to bring the density to the consistency of liquid porridge. We do not add salt!

2. While the flour and cereal are soaked in moisture, heat a non-stick frying pan over high heat.

3. Using a spoon, place the dough in the center of the pan and distribute it throughout the pan with intense horizontal jerks. Fry the flatbread for 3-4 minutes on both sides. Place the finished flatbreads in a stack.

1. Prepare the “medium dough”: mix 2 cups (400 g) of coarse flour, 0.5 cups (100 g) of finely ground wheat flour, 50 g (2 tablespoons) bran and 1.5-2 cups (375- 500 ml) warm water in a bowl and leave to soak for 20 minutes or more. Before using, add water or flour to the dough to bring it to the consistency of pizza dough or harder. We do not add salt!

2. Roll out the cakes as thin as possible until they fall apart (I get about 6-8 mm) to fit the diameter of the frying pan.

3. Fry the flatbreads in a very hot dry frying pan on both sides. You can fry it more strongly until it becomes semi-crisps, or you can fry it less until it becomes a soft flatbread with a crispy crust. Place the finished flatbreads in a stack.

It is advisable to prepare the dough for the crust in advance. It should ideally stand for at least 1 day. Knead the dough according to recipe No. 1, but add more water until it becomes a pancake batter. We do not add salt! Cover with a lid and leave at room temperature for several hours. Then you can store it in the refrigerator for a week, and if you need to store it longer, you can divide it into portions and freeze it.

Before baking, it is necessary to adjust the density of the dough: bring it to the consistency homemade cottage cheese by adding any flour or dry oatmeal to it.

1. Preheat the oven to maximum temperature.

2. Place parchment on a baking sheet and sprinkle it generously oatmeal and flour (the paper needs to be covered with flakes and flour with a layer of a couple of millimeters). Wholemeal dough is not very flexible, so we roll it out with our hands directly on a baking sheet on top of a layer of cereal. Flakes and flour create a dry layer and prevent the dough from sticking to the paper. When rolling out the dough, sprinkle the top generously with flour and oatmeal (you can also sprinkle with sesame seeds, flax seeds, sunflower seeds, pumpkin seeds, poppy seeds, etc.), so it does not stick to your hands and acquires a special taste. Using a spoon or your fingers, make parallel grooves in the dough with a step of 2-3 cm. This way the dough will bake better and it will be easier to break it.

3. Next is the most important thing! SWITCH THE OVEN TO THE UPPER GRILL and bake for 15 minutes in the upper part of the oven closer to the grill spiral. It is very important! Yeast-free dough cannot be baked for a long time, otherwise it will become a stone.

If you did everything according to the rules, then the dough should remain soft inside and crispy on the outside. Lunch!
