The researchers focused their attention on lettuce, mint and apples. "We discovered the effectiveness of apples by accident," explains Berringer.

During a control experiment, one of the participants in the experiment, who ate garlic and washed it down with water, found surprisingly few garlic-smelling molecules in the body. Remembering everything he had eaten during the day, the student mentioned a couple of apples that he had eaten a few hours earlier.

Eureka! When the subjects started chewing the apples immediately after the garlic, the smell noticeably weakened.

The fact is that the sulfur compounds contained in garlic enter into a chemical reaction with a number of other molecules, the so-called phenols.

During the experiment, the participants chewed garlic, eating it with a variety of foods. After that, they breathed into a mass spectrometer, which isolated the molecules in their breath.

The scientists experimented with various combinations of foods, including crushed garlic with water and a pure enzyme or some phenols, such as the rosmarinic acid found in mint. And subjected each combination to analysis in a mass spectrometer.

We immediately found out that apples, lettuce or mint were much more effective raw than cooked. This proves the participation of enzymes that catalyze chemical reactions, but decompose at high temperature.
