Late autumn is the time to prepare a variety of quick pickled vegetables. This is when pickled vegetables are not yet ready or you still don’t really want to enter the “winter” diet, and the summer ones are already over. Today I'm talking about one of my favorite express recipes. In 2 hours, you get a very tasty pickled cabbage with bell pepper fast food. The taste is delicate, very peculiar Sweet bell pepper gives the dish an interesting note and is well felt in the dish, despite its rather small amount in the bookmark.

I make such cabbage not only in the fall, in the season when there is a lot of pepper and it is affordable. In winter and spring, home or store freezing helps out. I put the pepper without defrosting. At the same time, I make sure that the freeze is dry, i.e. the pepper was without an ice "shell" - why do we need extra liquid in cabbage.

I got the recipe from Odessa Privoz - there, this appetizing, sweet and sour snack cabbage is found everywhere and is in great demand. I will also give the recipe shared by the saleswoman from the cabbage row, as well as my own version, slightly modified to suit the taste of our family. This quick pickled cabbage is interesting because it is prepared in a dry way, without brine. It is also even more interesting because the most impatient people can try it right away, without even waiting two hours :).

Required products:

  • Cabbage - 1 kg
  • Bulgarian pepper - 0.2 kg (one large or two medium)
  • Onion - 0.2 kg (1-2 pcs.)
  • Carrots - 0.2 kg (1-2 pieces)
  • Apples (optional, they were not in the recipe, but I like it :)) - 1 pc.
  • Salt -3 teaspoons
  • Sugar -4-5 tablespoons
  • Vinegar 9% -100 ml
  • Vegetable oil - ½ cup

In the "donated" recipe there was such a bookmark - for 10 kg of cabbage by weight - 20% each - pepper, carrots and onions. That is, in addition to cabbage, we take 2 kg of other vegetables. Dressing - salt -025 kg, sugar -0.75 kg, vinegar -1l, oil - 1l. Apples are not added at all, and the salad on the “showcase” is decorated with slices :) Here is such a marketing 🙂

In gratitude for the recipe, I bought a kilogram of ready-made snacks. At home, they ate it safely and quickly :). But I changed the bookmark a little - I reduced the amount of sugar and vinegar a little. It was too sweet and too vinegary for me :). Although, according to this recipe, the cabbage should be sweetish with a slight sourness. By the way, the kids love it. For very small ones, you can replace the vinegar with lemon juice and make a small portion, in parallel with the main preparation.

This pickled cabbage with bell pepper- a ready-made salad, tasty and very healthy, and easy to prepare.

In order for you to get a 3-liter jar of delicious pickled cabbage with bell pepper, you will need the following ingredients:

  • white cabbage - 2.5 kg;
  • carrots - 0.5 kg;
  • bell pepper (preferably red, so more beautiful) - 0.5 kg;
  • onion - 0.5 kg;
  • table salt - 2 tbsp. l.;
  • granulated sugar- 3.5 tbsp. l.;
  • vinegar 6% - 50 ml;
  • sunflower oil- 1 tbsp.

Wash the cabbage, remove the top leaves and chop finely. Add salt to it and lightly knead so that the juice begins to stand out. We grate the carrots, cut the bell pepper into small strips, onion into half rings.

We put all the vegetables in a large saucepan, add sunflower oil and sugar there, mix. Vinegar diluted 100 ml boiled water and add to vegetables. Again, mix everything well (it is better to interfere with your hands, slightly pressing the cabbage).

Now we put the vegetable mixture into prepared sterilized jars, knead tightly with our hands or a rolling pin. We close the jars with nylon lids and put them in the cellar or refrigerator. A few days later, when the vegetables release a lot of juice and marinate, you can taste the cabbage.

Pickled cabbage with Provencal bell pepper

This recipe pickled cabbage with bell pepper the good thing is that the cabbage pickles very quickly - you can taste this appetizer in 5-6 hours. It turns out very sweet, juicy and crispy - you will lick your fingers.

To prepare a 3-liter jar of cabbage, we take the following products:

  • white cabbage - 2 kg;
  • carrots - 0.5 kg (6 pcs.);
  • bell pepper - 0.6 kg (4 pcs.);
  • allspice - 10 peas;
  • Bay leaf- 6 leaves;
  • water - 500 ml;
  • table salt - 4 tablespoons;
  • granulated sugar - 1.5 tbsp.;
  • apple cider vinegar 4% - 500 ml;
  • sunflower oil - 1 tbsp.

We wash the cabbage, remove the upper leaves, chop it into strips and put it in a large bowl, a tub or an enamel pan. Grate carrots on a coarse grater and mix with cabbage. Bulgarian pepper cut into strips or half rings, mix with cabbage and carrots. When mixing, it is better to crush the cabbage - the softer it is, the more juice it will give and the better it will marinate.

Now we add spices to the vegetables - bay leaf, allspice peas. Mix everything again and leave for a while - let the juice stand out.

While the cabbage gives juice, let's do the marinade. Boil water, add sugar and salt to it, stir until completely dissolved, then pour in vinegar. Pour cabbage with hot marinade. We put the cabbage under oppression - you can press down on top with a special wooden circle, or you can put a saucer or cup of a suitable size, and on top - a jar of cereal or water or something heavy (about 1 kg is enough). The cabbage should be completely covered with the marinade.

Thus, we leave the cabbage at room temperature to marinate for 5-7 hours. After that, the cabbage will be ready for use - you can take a sample or put it in a jar, closing it with a nylon lid, and send it to the refrigerator for storage.

With Bulgarian pepper, it has a rich vegetable taste and a pleasant aroma. It goes well with many foods and can be a great addition to meat or boiled potatoes. Today's post features interesting selection recipes that can be used to prepare such appetizers.

  • 4 large spoons of olive oil.
  • Salt (to taste).

The washed cabbage is finely chopped with sharp knife and then put into a deep bowl. The vegetable prepared in this way is rubbed with salt so that it starts up the juice. Then strips of sweet pepper are added to the common bowl. The future appetizer is sprinkled with sugar and poured with vinegar. This simple vegetable appetizer is quick and easy to make. In addition, it is perfectly stored in the refrigerator for a whole month, so you can stock up on it for future use.   • 150 milliliters of water.
  • 150 grams of bell pepper.
  • A clove of garlic.
  • A kilo of white cabbage.
  • 180 grams of carrots.
  • 2 large spoons apple cider vinegar.
  • 50 grams of sugar.
  • 1.5 teaspoons of salt.
  • 70 milliliters of vegetable oil.
