How to make apple cider vinegar

As mentioned above, apple cider vinegar prepared at home is distinguished by higher quality, good taste and medicinal properties due to the fact that selected apples are used as raw materials. The concentration of homemade vinegar is slightly lower compared to the product prepared in industrial conditions.

There are several ways to make apple cider vinegar.

Recipe 1.

This recipe was proposed by Dr. D. S. Jarvis.

Apples are washed and damaged parts are removed. Grate the fruits prepared in this way on a coarse grater. Then the grated apples are placed in an enamel or glass vessel. For every 800 g of raw material, add 1 liter of warm boiled water. Add honey or sugar to the resulting mixture (100 g per 1 liter of water). In order for the fermentation process to proceed faster, dry rye bread is added to the slurry (20 g per 1 liter or 10 g of yeast per liter).

The mixture is kept in an open vessel at a temperature of 20–30 °C. The fermenting pulp is mixed with a wooden spoon 2-3 times a day. After 10 days, it is squeezed out through gauze, then the resulting liquid is filtered and placed in a jar, sugar or honey is added (50-100 g per 1 liter of juice), after which the jar is closed with gauze and placed in a warm place to continue fermentation. The processes leading to the formation of apple cider vinegar, according to Dr. Jarvie's recipe, last 40-60 days.

The resulting vinegar should be filtered again, bottled, and tightly corked. It is best to keep vinegar in a cool place, and the temperature should be maintained between 6–8 °C.

Recipe 2.

In accordance with this recipe, you need to use carrion or overripe fruits to make apple cider vinegar. Apples intended for the production of medicinal vinegar are not treated with chemicals against diseases and harmful insects during their growth and ripening. It is also not recommended to apply increased rates of chemical fertilizers as tree feeding.

Apples are prepared as follows: they are washed, cut with a knife into small pieces or crushed until a pulp is obtained, transferred to a saucepan and filled with boiled water heated to a temperature of approximately 65–70 °C. Pour enough water to cover the crushed fruits by 3–4 cm.

50-100 g of sugar per kilogram is added to the prepared mass (depending on whether the apple variety was sweet or sour).

In order for the fermentation process to be most successful, the largest possible area of ​​contact between the surface of the apple mass and the air is necessary, so you should use a pan with a wide bottom and neck.

Fermentation should take place in a warm place. Stir the pulp several times a day for 14 days, preventing the top layer from drying out. At the same time, you should not destroy the thick foamy whitish film - the vinegar uterus - if it forms on the surface, since it also has valuable medicinal properties, as mentioned above. Then the mass is filtered through 2-3 layers of gauze, separating the liquid, which is poured into jars for further fermentation.

In each jar there should be a free space of 5-7 cm high at the top to avoid liquid overflowing.

The vinegar is considered ready after 2 weeks. It is poured (being careful not to cloud it) into bottles that are well sealed (for long-term storage, the corks can be filled with paraffin). The sediment is drained, filtered through thick cotton cloth and stored in a separate bottle.

Store jars or bottles of prepared vinegar in a dark place at a temperature of 4-20 °C.

Recipe 3.

To prepare apple cider vinegar according to this recipe, processed apples (washed, without rotten or wormy areas), whole, including peel and core, are grated or crushed.

Warm boiled water is added to the pulp, the amount of which is equal to the amount of apple mass obtained. Then add another 100 g of sugar or honey for each liter of mass and yeast - 100 g for every 10 kg.

For vinegar fermentation to proceed normally, the liquid must contain no more than 20% sugar, from which alcohol will be obtained.

After this, the mixture is poured into wide pans, where it must undergo primary fermentation for 10 days. Cover the pan with gauze. The apple mixture should be stirred periodically.

After 10 days, the composition should be filtered and a new portion of honey should be added to it (at the rate of 100 g of honey per 1 liter). Then stir thoroughly until the honey is completely dissolved.

Further fermentation of the mixture should take place in bottles into which it is poured without capping, but only covering them with gauze. Bottles should be stored in a warm place.

The readiness of vinegar is judged by whether the fermentation processes have stopped. This period may last 4–6 weeks. In this case, the liquid becomes clear and a sediment forms, which is carefully separated by draining the finished vinegar using a hose. After this, it is filtered again using 3 layers of gauze, bottled, sealed with stoppers, which are filled with wax, and stored in the refrigerator or other cool place.

After a few months, reddish flakes may appear in the bottles - a sediment that is absolutely harmless.
