Cooking method:

1. To make a sponge dessert based on choux pastry, I first start with a dough. To do this, I sift 50 grams. wheat flour in a bowl and mix it with 180 gr. hot milk.

It should not be boiling, a temperature of 80-90 degrees is enough. Stir with a spatula until smooth.

2. The dish is prepared using pressed yeast step by step. I mix them with the remaining 20 grams of hot milk (temperature no higher than 37 degrees) and 10 grams of sugar. This is about a tablespoon. I also mix everything to a homogeneous consistency.

3. Cool the milk mixture to body temperature and mix with yeast. Cover the bowl with cling film and place in a warm place for 30-40 minutes until the dough rises and doubles in volume.

4. At this time I begin to prepare the rest of the dough. To do this, I separate the whites from the yolks and leave the whites for the filling, and mix the yolks with 40 grams of sugar. Pour vanilla sugar, softened butter and salt into the same bowl. Mix everything thoroughly with a whisk or tablespoon.

5. Add the mixture to the suitable dough and mix everything well, bringing it to a homogeneous mass.

6. To get our lean, sweet roll, gradually add the rest of the flour, constantly stirring the dough to knead elastic and soft.

7. To do this, knead it for 10 minutes. After this, I cover the bowl with the dough with cling film and leave it in a warm place for 1-1.5 hours to allow it to double in size.

8. Pour the poppy seeds for the filling into a saucepan and fill with water.

9. Place on the fire and bring to a boil. After this, cook for another 15 minutes, stirring constantly.

10. After cooking, strain the poppy seeds to drain the water and squeeze well, getting rid of any remaining liquid. I grind it thoroughly using an immersion blender.

11. I stretch the risen dough into a rectangle with my hands and then fold it as follows.

12. Visually divide the dough into three strips and put the sides inside one by one. Next, I again visually divide it into three parts and again fold the ends inward.

13. Cover the resulting lump with a bowl and leave for 30 minutes. After this time, I repeat all the steps and again leave it under the bowl for 30 minutes. If you don’t understand anything, see where at the end I show how to fold yeast dough.

14. Now it’s time for the whites. Using a mixer, I beat them until they form a stable foam.

Without stopping whisking, gradually pour 120 grams of sugar into the bowl. I don’t stop until I see stable, beautiful foam.

15. Mix poppy seeds with the protein mixture. I get a juicy filling. You can replace it with a mixture of one or more types of nuts. It’s also delicious to make a raisin roll.

16. Cut the dough into two equal parts.

17. Roll out half into a rectangle measuring approximately 30 by 30 centimeters.

18. Spread half of the filling in an even layer over the dough.

19. I roll up a tight, even, beautiful roll on the inside. I do the same with the second half of the products.

20. Don’t know how to bake a delicious dish without burning? Very easy. I use baking paper for this, which is easy to find in kitchen supply stores. I grease it with butter and wrap the resulting rolls, leaving at least 5 centimeters of empty paper on the sides.

I leave them on the baking sheet for 5-10 minutes so that they rise and spread out.

22. I preheat the oven to 190 degrees and place a baking sheet with the preparations in it to bake for 35 minutes.

Preparation

  1. Heat the milk in a saucepan until the temperature reaches 40°C. For the dough, mix yeast with sugar (1 tsp), flour (1 tsp) and add this mixture to the milk. Leave the dough in a warm place for 30 minutes. Important! In a milk, sugar and flour environment, yeast grows quickly!
  2. Mix the solution with flour (half a glass) and leave it warm for 60 minutes.
  3. After an hour, the dough is mixed with the rest of the products: sugar, salt, flour, beaten eggs, butter. The finished dough is placed in a warm place for final maturation.

Mix the ingredients with a tablespoon, place the bowl in a warm place and let it sit for about 15 minutes. The yeast should rise to 5 – 8 centimeters up in the form of an air cap. If this does not happen, then run for fresh yeast, since the dough with such yeast simply will not rise and all your efforts will be in vain. If everything is in order and the yeast has risen, add the remaining warm milk and sugar and salt to it. Mix the ingredients with a tablespoon. Turn the stove on low, place a bowl of butter on it and melt it. The oil should not boil! Allow the melted fat to cool until approximately 30 degrees and add to the dough. Then beat the eggs into a separate deep plate, having previously put one yolk in a glass, it will be useful later. Beat the eggs with a fork for 1 – 2 minutes and add to the dough. Mix the total mass with a tablespoon and add 1 part of the flour and mix everything again, the dough should be of medium thickness. Let the dough sit and rise for 20 – 25 minutes. Through 25 minutes add the last of the flour to the dough and knead it directly in the bowl with clean hands. Then, dust the kitchen table with flour, place the dough on it, and knead it in flour until it reaches the consistency you need. To prepare this type of roll, the dough should be soft and stick to your hands a little, but not too much! Let the finished dough rest 45 minutes and you can start preparing the rolls.

Step 3: form the rolls.

Re-dust the table with wheat flour. With clean hands, divide the dough into 2 equal parts, place one in a bowl and cover with a kitchen towel, and roll the second on the table using a rolling pin into a long and wide layer, with an approximate thickness of 1 centimeter. On its surface, using a tablespoon, apply a layer of poppy seeds steamed in milk and moisten it with a baking brush, sugar syrup previously diluted in an iron mug. Approximate thickness of the poppy layer up to 5 millimeters or whatever you like. Roll the roll, fold the edges at the ends under the main part of the roll. Remove the baking sheet with the finished rolls from the oven, let them cool and then transfer them to a plate using a kitchen spatula. Cut the finished rolls into portions before eating.

  1. Pour boiling water over the poppy seeds and leave to steam for 10 minutes. Decant the water and pour boiling water again for 5 minutes.
  2. Carefully strain the poppy seeds through a sieve, squeezing out excess water with a spoon. Mix with sugar.
  3. We rub the poppy seeds through a meat grinder and transfer them to a saucepan.
  4. Add a little milk, butter, honey and heat over low heat with constant stirring.
  5. Gradually add milk and continue cooking over low heat for about 1 hour. The filling should not be liquid. You may need a little less milk.
  6. Leave the finished poppy seed filling to cool.
