To prepare a truly delicious eggnog drink, you should follow simple rules. Eggs should only be fresh to exclude the possibility of becoming infected with salmonellosis. Is there such a danger? The answer is yes, but only if the eggs are stale. It's easy to check - just put them in a glass of water. If the egg does not sink, it means it is not fresh, so the risk of getting sick increases.

In the case of fresh eggs, you should also be careful. It’s better to play it safe and wash the shells with a brush. To avoid infection:

  • do not take eggs with cracks in the shell;
  • buy only fresh products from the store with a production date no more than 5-7 days ago;
  • Do not prepare a drink from eggs without any shells, i.e. battle.

If you want to enjoy truly delicious eggnog, use homemade eggs. With store-bought ones, the aroma is not as pleasant. Recipes for making eggnog often contain powdered sugar. You can do it yourself. To do this, granulated sugar is ground in a mortar to a dusty consistency. A coffee grinder can also handle this task. It will turn regular sugar into powder in a matter of seconds. Here are some more tips for making eggnog:

  1. For children, it is better to use quail eggs, and slightly heat the drink itself or add boiled milk. For medicinal purposes, you can add a little baking soda. In this form, it is better to take the cocktail in small portions.
  2. To give eggnog an expectorant property, you can add a couple of drops of iodine.
  3. For sore throat in an adult, it is recommended to add cognac or rum to the drink. They have a disinfecting and warming effect. As a result, the cough softens.
  4. The recipe for eggnog made only from proteins can be used to prepare the glaze that is used to cover the Easter cake.

Video: Gogol-mogol with milk

The real eggnog recipe.

Preface: it is not possible to cook a large piece of meat in 15 minutes, and it is not possible to beat a protein in 15 minutes, relying on speed, speed is not a fact here, the whipping time is a fact, which is what our grandmothers did with spoons.

You need to take 3 whites of large eggs (if democratic eggs, then 4), 1 glass of granulated sugar, crush it into powder with a clean coffee grinder, this will help beat the eggnog at the first stage. It is not necessary to add lemon to eggnog.
1. The yolk is fat; if it gets into the white, the latter will not whip.
If you beat the eggs with the yolk, it's not eggnog, it's scrambled eggs that will never be fluffy.
2. To prevent eggnog from “sagging” after baking, the egg white must be cooled in the freezer for 10-15 minutes before whipping.
Even if you took pre-chilled eggs, this operation still needs to be performed. In the early 70s, I experimented: if pre-cooled protein got into the eggnog, then when baking Airy Meringue from it, the latter rose three more times in the oven and did not fall off after removal from the hot baking sheet, it was really Airy Meringue. If the protein did not cool, everything went in order, but when it cooled, it turned out to be a blob. Some write that you need to dry the meringue in the oven, but it will not be meringue, but a sweet cracker.
3. Eggnog must be beaten for at least 25 minutes. At 22, 23 minutes you will see that your eggnog will begin to grow and thicken several times before your eyes (up to 4-6 times in volume).

This secret is described in old books on baking pastries and cakes, 100% verified. But today’s “Valued” food processors cannot operate for more than 15 minutes. Because they shortened the wires in the winding sections, as a result of which the current sharply increased, it seems to have become more powerful, but it cannot work for a long time - it overheats, a trick of modern trade, but in fact a fraud. The old USSR combine harvesters with an engine power of only 300 W could work for more than 30 minutes. These (I have two of them: Mriya and Mriya2, but the plastic bowls, I introduce them, broke due to old age, they began to break after 7-8 years of use, today only the ones that were made of metal and glass work, a meat grinder, a blender, a coffee grinder, even a Mrievskaya 77 juicer year of release) I whipped natural eggnog back in the late 70s, early 80s.
The “New” chefs deliberately conceal these secrets, citing some necessary additives, such as soap grass. You need fresh egg whites and granulated sugar, EVERYTHING.

One or two minutes before readiness, you can add a few drops of USSR barberry essence, then the eggnog will taste very light.

Another secret. In my youth, when I was making buttercream for the cakes my wife baked, I used to ask her how many cakes there would be,
if one, I added vanillin to the cream, it turned out to be a “heavy” tasting cake, eat one piece and don’t need more,
and if there were two, I added barberry essence to the cream, no matter how much cake was on the table, it was eaten in years.

  • A classic recipe for adults and children. The yolks are separated from the whites from two eggs. This can be done in a very simple way - break each egg separately in a saucer with a flat bottom and, covering the yolk with a stack of suitable diameter, turn the mixture into another container, carefully holding the stack in which, in fact, the yolk remains. Add sugar to taste and beat the contents until the sugar is completely dissolved.
  • The honey recipe is also a classic. The best option is to use acacia honey. It is the only one suitable for children with allergies. One yolk is separated from the white and beaten with three teaspoons of acacia honey, after which 200 ml of warmed fresh milk is added. If you add a pinch of vanilla to the cocktail, the drink will acquire a special taste.

  • Carrot recipe – eggnog with carrot juice. A glass of slightly warmed carrot juice, a pinch of ground allspice, salt and turmeric are added to one chicken egg yolk, separated from the white. All this is thoroughly mixed.
  • For this recipe, you need to buy natural butter with a fat content of at least 82 percent. It is better to use homemade oil. Ingredients: yolk of one egg, 2 teaspoons of butter, 1 teaspoon of honey, 100 grams of warm milk. Preparation: grind honey with yolks, add melted butter, beat the resulting mixture with a mixer.
  • This recipe has its own little secret. It is advisable to drink it not in the morning, but in the evening before bed. Its composition is almost the same as the previous one, only there are twice as many ingredients. The last meal is calculated 2 hours before drinking the drink. A little cinnamon, nutmeg or ground bay pepper, depending on your taste preferences, will absolutely not hurt. All of these spices have a very gentle effect on the nervous and circulatory systems, relax the body, relieve fatigue, and thin the blood. You can add them individually or a little of each. To make this eggnog even more effective for coughs and other symptoms of colds, you need to add a pinch of soda or squeeze out a clove of garlic.

  • Coffee recipe. True, the drink for children is made from cocoa. One egg is enough for two servings. After separating the yolk from the white, the white is whipped with a mixer into a thick foam, and the yolk is thoroughly ground with sugar. Warm milk is poured into the bottom of the container, then prepared coffee or cocoa, half of the yolk mashed to white is added on top, and finally the whipped white is laid out in the center.
  • Fruit recipe. It is useful especially in the summer and autumn seasons, when fruits contain many vitamins and other useful substances, thanks to which the drink acquires a rich taste. Take 100 ml of natural juice from cherries, apples, apricots or other fruits, prepared at home, beat in a mixer with pre-pounded two yolks with a small amount of salt and three tablespoons of sugar. Add 400 ml of boiled milk at room temperature and half a glass of cool water to the resulting mixture. All this is thoroughly mixed. Separately whipped to a stiff foam, the protein is added at the end and sprinkled with grated walnuts on top. This delicacy is usually drunk through a straw.

What is the benefit?

The maximum benefit from such a cocktail will be if it is consumed with a certain frequency. For example, once a day for a week, then take a two-three week break. The presence of vitamins, proteins, fats and essential amino acids in the cocktail will contribute to the active growth of the child’s body, strengthen the immune system, and have a beneficial effect on the nervous system. In the autumn and spring periods, when humidity and air temperature increase, the breaks between taking the drink can be taken shorter.

Sometimes a few drops of iodine should be added to cough eggnog for a dry cough, or five to seven drops of propolis tincture for a wet cough. Based on the ingredients included in the recipes for making eggnog, its benefits are obvious. However, there are times when it can cause harm. For example, if you use stale chicken eggs, you can become infected with salmonella. Therefore, it is recommended to consume only fresh products purchased from a trusted seller. As a last resort, you can switch to quail eggs. Since the body temperature of a quail is higher than that of a chicken, it does not suffer from salmonella. It is believed that eating two quail eggs a day brings maximum benefits to the body. If you use them in eggnog instead of chicken eggs, it is recommended to do this in a two to one ratio.

People with diseases such as:

  • allergies (especially to chicken eggs);
  • diabetes;
  • atherosclerosis.

This healing drink can also cause harm to those who have problems with the gastrointestinal tract, liver and gall bladder. Do not forget that it is not recommended to give it to children under five years of age.

The delicious thick eggnog drink, which is made mainly from egg yolks beaten with sugar, has nothing in common with the great writer Nikolai Vasilyevich Gogol. Although, having heard this unusual name for the first time, something similar could be assumed.

In fact, eggnog, which sounds similar in different languages, (“hugger-mugger” (English), “gogle-mogle” (Yiddish), “kogel-mogel” (Polish), “kuddelmuddel” (German language), means “mixture” or “hash.” It is most often drunk during the colder months of the year, and in the United States, National Eggnog Day is celebrated on December 24. We thought this would be a fun opportunity to find out the secrets and recipes for making this dessert.
There are many versions of the origin of the name gogol-mogul. One of them says that a certain cantor named Gogel from Mogilev once lost his voice. Since the cantor's voice is his bread and butter, it was urgent to find a cure. And then he beat the yolks with salt and sugar, remembered the bread, added that too, drank it all and recovered. It sounds plausible, because everyone knows that since ancient times singers drank raw eggs to make their voices sound better.
According to another legend, the authorship of eggnog belongs to the German confectioner Manfred Kekenbauer, who lived in the 19th century. Years passed, the patent for this invention was bought by a famous food concern for one and a half million marks, and mass production of the dessert began.

Variations on the theme of eggnog

The basic recipe for a delicious egg drink is very simple and publicly available. It is recommended to drink a strengthening cocktail for the prevention of diseases and for colds or sore throats, unless you are allergic to eggs. Beat the cold yolk with a piece of soft butter. You can add a little milk, a pinch of nutmeg or cocoa. Please note that for eggnog you need to use the freshest, highest quality egg. By the way, you can determine the freshness of an egg simply by lowering it into water - a fresh egg will sink to the bottom, and a stale egg will float up like a float.
Eggnog with alcohol will appeal to those with a sweet tooth over 18 years of age. For this cocktail, slowly whisk the egg yolks and sugar until smooth, then add a little rum, cognac, whiskey, brandy or fortified wine such as sherry or Madeira. Add ice and fruit syrup. Pour the drink into a tall glass and serve with a straw. The cocktail can be decorated with almond shavings and sprinkled with cocoa.

The Dutch slightly changed the recipe and created the famous Advocate liqueur. Beat the egg yolks with salt and sugar, add cognac and, continuing to beat, heat everything in a water bath to a boil. At the end, add a little vanilla extract, pour into wide liqueur glasses, garnish with whipped cream and serve with a cocktail spoon. In such a thick drink, the liquor is not drunk, but literally tasted. The basic product of eggnog, egg yolk, has a mild taste that goes well with different ingredients, which means you can create new variations of this drink. For example, if you add honey and heat, you get a sunny-honey eggnog, an ideal remedy for the winter cold, and if you mix the yolk with berry or fruit juice, you get a refreshing cocktail for hot summer days. You can experiment with salt, milk, strong coffee and cocoa, grated chocolate and coconut. Use your imagination and you will find your perfect eggnog!

Classic eggnog recipe

Here is the recipe, which in 1952 was published in the sacred cookbook of those times - “The Book of Tasty and Healthy Food”: “Eggnog can be prepared in different ways, in all cases obtaining a highly nutritious and tasty drink.
1. Lightly beat 1 egg, add 1 tbsp. spoon of sugar, 2 tbsp. spoons of wine, a little salt; mix all this thoroughly, pour in 3/4 cup of pasteurized or boiled milk and strain. Instead of wine, you can add a little grated nutmeg.
2. Beat 1 egg yolk, add 1 tbsp. a spoonful of sugar, a little salt, 2 tbsp. spoons of wine and 2/3 cup of milk. Mix all this, strain and combine with beaten egg white. Stir well again before serving.
3. Mix 1 egg yolk, 1 tbsp. a spoonful of sugar, a little salt and vanillin, pour in 3/4 cup of milk, mix again and strain.
If you want to get a sweet eggnog, then beat the whites together with sugar until thick and pour them into the mixture with the yolk or put it on top of a glass.”
Bon appetit!
